Instructions
- Preheat oven to 375–400°F (190–200°C).
- Rinse and pat dry the cobia fillets thoroughly.
- Check for pin bones and remove with tweezers.
- Brush fillets with olive oil and season with garlic, salt, pepper, and lemon juice.
- For variations, add melted butter and dill for garlic butter flavor, Cajun spices for a spicy version, or layer with cherry tomatoes and olives for Mediterranean style.
- Place fillets on a lightly oiled baking dish.
- Bake uncovered for 12–18 minutes depending on thickness (about 10 minutes per inch).
- Check with a meat thermometer; fish is done at 145°F when flesh is opaque and flakes easily.
- Let rest 2 minutes before serving.
