Ingredients

Scale

For the Chicken

  • 1 lb boneless, skinless chicken breast, halved lengthwise
  • 1 tsp salt
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/4 tsp black pepper
  • 1 tbsp olive oil

For the Base

  • 2 cups chopped romaine lettuce
  • 1 cup chopped Tuscan or lacinato kale
  • 1/3 cup diced roasted red peppers
  • 1/3 cup chopped grilled artichoke hearts
  • 1/4 cup thinly sliced red onion
  • 1 avocado, diced

For the Sauce and Extras

  • 1/2 cup creamy Caesar dressing
  • 1/3 cup freshly grated parmesan cheese
  • Optional croutons or crushed pita chips

For the Wrap

  • 4 large burrito-sized tortillas (10-inch)

Instructions

  1. Season chicken with salt, garlic powder, onion powder, and black pepper.
  2. Heat skillet with olive oil over medium-high and cook chicken 5 minutes per side, until golden and cooked through (165°F).
  3. Let rest 10 minutes, then dice into bite-sized pieces.
  4. In a large bowl, combine chicken, romaine, kale, peppers, artichokes, onion, avocado, parmesan, and Caesar dressing. Toss gently.
  5. Warm tortillas on skillet or microwave for 10–15 seconds.
  6. Assemble wraps by placing filling slightly off-center. Fold sides inward, then roll up from the bottom.
  7. Slice in half and serve immediately or wrap for on-the-go.

Notes

For meal prep, store components separately and assemble just before eating. Use dry romaine and add dressing only when ready to serve to avoid sogginess.
