  • ½ cup spinach
  • ¼ cup cherry tomatoes
  • 2 large romaine lettuce leaves
  • 1 slice avocado
  • 1 tbsp Dijon mustard
  • 1 slice Swiss cheese

Instructions

  1. In a bowl, mix ground chicken with salt, pepper, garlic powder, onion powder, paprika, and sage. Do not overmix.
  2. Form mixture into small, round patties.
  3. Heat oil in a skillet over medium heat and cook patties for 4-5 minutes per side until internal temperature reaches 165°F (74°C).
  4. Let patties rest before serving.
  5. For a breakfast sandwich: Toast muffin, cook an egg, reheat patty, and layer with cheese and avocado.
  6. For an egg scramble: Dice patty, sauté with spinach and tomatoes, then scramble eggs into the mixture.
  7. For a keto wrap: Place patty on romaine leaves, top with avocado, mustard, and Swiss cheese, then wrap and serve.
