Ingredients
8 ounces cream cheese, softened
4 ounces canned green chilies, diced
45 ounces whole kernel corn, canned and drained
1.25 cups Colby Jack cheese, shredded and divided
1/2 yellow onion, finely diced
1 teaspoon white sugar
1 teaspoon garlic powder
1/2 teaspoon Old Bay or Cajun seasoning
1/4 teaspoon salt
1/8 teaspoon black pepper
Fresh herbs such as green onions or parsley for optional garnish
Instructions
Preheat the oven to 300 degrees Fahrenheit and lightly grease a 9 by 9 inch baking dish.
Add the cream cheese and diced green chilies to a microwave safe bowl and heat for 1 to 2 minutes until softened.
Stir the mixture until completely smooth and creamy.
Add the drained corn, 3/4 cup of the shredded Colby Jack cheese, diced onion, sugar, garlic powder, Old Bay or Cajun seasoning, salt, and black pepper.
Gently fold everything together until fully combined.
Transfer the mixture to the prepared baking dish and spread it evenly.
Sprinkle the remaining 1/2 cup of cheese over the top.
Bake for 60 minutes or until the cheese is fully melted and lightly browned.
Broil for 1 to 2 minutes if extra browning is desired.
Let the casserole cool slightly before serving and garnish with fresh herbs if desired.
Notes
For extra creaminess, make sure the cream cheese is fully softened before mixing. Add cayenne pepper or extra green chilies for heat. For a sweeter version, substitute part of the whole corn with creamed corn.
