Description

Ditalini pasta recipe soup is a quick and hearty comfort dish made with tender pasta, savory broth, and fresh vegetables. Perfect for busy weeknights!


Ingredients

Scale
  • 1 cup ditalini pasta

  • 2 tablespoons olive oil

  • 1 onion, chopped

  • 2 cloves garlic, minced

  • 2 carrots, sliced

  • 2 celery stalks, chopped

  • 1 can (15 oz) diced tomatoes

  • 4 cups vegetable or chicken broth

  • 1 can (15 oz) cannellini beans, drained

  • 1 teaspoon Italian seasoning

  • Salt and pepper to taste

  • Fresh parsley, for garnish

  • Parmesan cheese (optional)


Instructions

  • Heat olive oil in a large pot over medium heat.

  • Sauté onion, garlic, carrots, and celery for 5–7 minutes until softened.

  • Add diced tomatoes, broth, beans, and Italian seasoning. Stir and bring to a boil.

  • Reduce heat and simmer for 10–15 minutes.

  • In a separate pot, cook ditalini pasta until al dente. Drain.

  • Add cooked pasta to the soup, season with salt and pepper.

  • Simmer for 5 more minutes, then garnish with parsley and Parmesan if desired.

 

  • Serve hot and enjoy!

Notes

  • Cook pasta separately to prevent it from becoming mushy in leftovers.

  • For added protein, stir in cooked sausage or shredded chicken.

  • To make it vegan, use vegetable broth and skip the cheese.
