Description
Ditalini pasta recipe soup is a quick and hearty comfort dish made with tender pasta, savory broth, and fresh vegetables. Perfect for busy weeknights!
Ingredients
1 cup ditalini pasta
2 tablespoons olive oil
1 onion, chopped
2 cloves garlic, minced
2 carrots, sliced
2 celery stalks, chopped
1 can (15 oz) diced tomatoes
4 cups vegetable or chicken broth
1 can (15 oz) cannellini beans, drained
1 teaspoon Italian seasoning
Salt and pepper to taste
Fresh parsley, for garnish
Parmesan cheese (optional)
Instructions
Heat olive oil in a large pot over medium heat.
Sauté onion, garlic, carrots, and celery for 5–7 minutes until softened.
Add diced tomatoes, broth, beans, and Italian seasoning. Stir and bring to a boil.
Reduce heat and simmer for 10–15 minutes.
In a separate pot, cook ditalini pasta until al dente. Drain.
Add cooked pasta to the soup, season with salt and pepper.
Simmer for 5 more minutes, then garnish with parsley and Parmesan if desired.
Serve hot and enjoy!
Notes
Cook pasta separately to prevent it from becoming mushy in leftovers.
For added protein, stir in cooked sausage or shredded chicken.
To make it vegan, use vegetable broth and skip the cheese.
