For the beef mixture

  • 1 pound lean ground beef
  • 1 teaspoon chili powder
  • 1 teaspoon dried basil
  • 3/4 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon onion powder
  • 1 teaspoon minced garlic

For the vegetables

  • 2 tablespoons olive oil or avocado oil
  • 2 cups carrots, peeled and diced
  • 2 cups sweet potatoes, peeled and diced
  • 1 teaspoon salt
  • 1 teaspoon chili powder
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon crushed red pepper
  • 1 cup beef stock or broth
  • 1 pound Brussels sprouts, diced

Instructions

  1. Place a large skillet over medium-high heat and add the ground beef. Break into crumbles and cook until browned.
  2. Season beef with salt, pepper, chili powder, onion powder, and dried basil. Add minced garlic and cook 1 minute. Remove beef and set aside.
  3. Add olive oil to the skillet. Sauté sweet potatoes and carrots with salt, chili powder, ground ginger, onion powder, and crushed red pepper for 5–10 minutes until edges brown.
  4. Return beef to skillet. Pour in beef stock and add Brussels sprouts. Stir well.
  5. Reduce heat to medium, cover, and cook for 5–8 minutes until vegetables are tender.
  6. Taste and adjust seasoning. Serve hot.
  7. For Casserole: Follow steps 1–2, transfer to baking dish, top with cheese, and bake at 375°F for 20–25 minutes.
  8. For Stuffed Sweet Potato: Bake 4 sweet potatoes at 400°F for 45–60 minutes, slice open, fluff insides, and top with beef mixture.
  9. For Slow Cooker: Brown beef (optional), place all ingredients in slow cooker, cook on low 4–6 hours or high 2–3 hours.

Notes

Cut sweet potatoes evenly for even cooking. Toast spices before adding liquids to deepen flavor. Avoid overcrowding the pan for better browning.
