For the Spice Blend

  • 2 teaspoons salt
  • 2 teaspoons chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • ½ teaspoon ground coriander
  • ½ teaspoon dried oregano

For the Paste Base

  • 1 whole garlic bulb, roasted
  • 1 medium white onion, diced
  • 1 can (14.5 oz) fire-roasted tomatoes
  • 4 teaspoons tomato paste
  • ½ cup chipotle peppers in adobo sauce
  • 3 teaspoons rice vinegar
  • 3 teaspoons garlic chili paste
  • 3 teaspoons sugar
  • 4 teaspoons unsweetened cocoa powder

Instructions

  1. Slice off the top of the garlic bulb, drizzle with olive oil, wrap in foil, and roast at 400°F for 35 minutes. Let cool, then squeeze out the cloves.
  2. Mix salt, chili powder, cumin, smoked paprika, garlic powder, coriander, and oregano in a small bowl.
  3. In a food processor, blend the roasted garlic and diced onion. Add tomatoes, tomato paste, and chipotle peppers. Blend until smooth.
  4. Transfer the mix to a pot. Stir in vinegar, chili paste, sugar, cocoa powder, and the spice blend. Simmer over medium heat.
  5. Cook uncovered for 15–20 minutes, stirring frequently, until thickened.
  6. Remove from heat, let cool slightly, and use an immersion blender to smooth out the texture.
  7. Cool fully, then store in jars in the fridge or freeze in portions.

Notes

Use this paste to level up tacos, stir into soups, mix into scrambled eggs, or marinate proteins like chicken or tofu. Freeze in cubes for quick access.
