Ingredients

  • 1/3 cup olive oil
  • 1 tsp lemon zest
  • 1/3 cup lemon juice
  • 3 cloves garlic, minced
  • 1 tsp Dijon mustard
  • 1 tbsp fresh oregano (or 2 tsp dried)
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • 2 lbs chicken breasts or thighs, boneless and skinless

Instructions

  1. In a bowl, whisk together olive oil, lemon zest, lemon juice, garlic, Dijon mustard, oregano, salt, and pepper.
  2. Add chicken and coat evenly with the marinade. Cover and refrigerate for 30 minutes to 4 hours.
  3. Grill method: Preheat grill to 450°F (232°C), oil grates, and grill chicken 6-8 minutes per side until internal temperature reaches 165°F (74°C). Rest 5-7 minutes.
  4. Oven method: Preheat oven to 425°F (218°C). Arrange chicken on parchment-lined sheet pan and bake 20-22 minutes until 165°F (74°C). Rest 5 minutes.
  5. Stovetop method: Heat 1 tbsp olive oil in a skillet over medium-high heat. Cook chicken 12-15 minutes, turning once, until 165°F (74°C). Rest 5-10 minutes.

Notes

Do not over-marinate to avoid tough texture. Always use a meat thermometer to check doneness and rest chicken before slicing.
