Ingredients

- 1/3 cup olive oil
- 1 tsp lemon zest
- 1/3 cup lemon juice
- 3 cloves garlic, minced
- 1 tsp Dijon mustard
- 1 tbsp fresh oregano (or 2 tsp dried)
- 1 tsp kosher salt
- 1/2 tsp black pepper
- 2 lbs chicken breasts or thighs, boneless and skinless
Instructions
- In a bowl, whisk together olive oil, lemon zest, lemon juice, garlic, Dijon mustard, oregano, salt, and pepper.
- Add chicken and coat evenly with the marinade. Cover and refrigerate for 30 minutes to 4 hours.
- Grill method: Preheat grill to 450°F (232°C), oil grates, and grill chicken 6-8 minutes per side until internal temperature reaches 165°F (74°C). Rest 5-7 minutes.
- Oven method: Preheat oven to 425°F (218°C). Arrange chicken on parchment-lined sheet pan and bake 20-22 minutes until 165°F (74°C). Rest 5 minutes.
- Stovetop method: Heat 1 tbsp olive oil in a skillet over medium-high heat. Cook chicken 12-15 minutes, turning once, until 165°F (74°C). Rest 5-10 minutes.
Notes
Do not over-marinate to avoid tough texture. Always use a meat thermometer to check doneness and rest chicken before slicing.
