Description

This easy mini meatloaf recipe is juicy, flavorful, and perfect for busy weeknights or meal prep. Bake in muffin tins or shape by hand—ready in just 30 minutes!


Ingredients

–    1 lb ground beef (80/20) or turkey ,

–    1 egg ,

–    1/2 cup breadcrumbs ,

–    1/4 cup milk ,

–    1/2 cup finely chopped onion ,

–    1 tsp salt ,

–    1/2 tsp black pepper ,

–    1 tsp garlic powder ,

–    1 tbsp Worcestershire sauce ,

–    1/4 cup ketchup (plus more for topping) ,


Instructions

–  Preheat oven to 350°F (175°C). Grease a muffin tin or line a baking sheet with foil.

–  In a large bowl, combine ground meat, egg, breadcrumbs, milk, onion, seasonings, Worcestershire, and ketchup.

–  Mix gently until just combined. Do not overmix.

–  Form into 6–8 mini loaves or divide evenly in the muffin tin.

–  Top each loaf with a small amount of ketchup or glaze.

–  Bake for 25 minutes or until internal temperature reaches 160°F (165°F for poultry).

–  Let rest 5 minutes before serving.
