Ingredients
4 boneless, skinless chicken thighs (or breasts)
½ cup orange marmalade
2 tablespoons soy sauce
1 clove garlic, minced
½ teaspoon grated ginger (optional)
1 tablespoon olive oil
Salt and pepper, to taste
Instructions
Season chicken with salt and pepper.
Mix orange marmalade, soy sauce, garlic, and ginger in a small bowl.
Heat olive oil in a skillet and sear chicken 2–3 minutes per side.
Pour the marmalade glaze over chicken and simmer covered on low heat for 12–15 minutes, or bake at 375°F for 20–25 minutes.
Spoon extra glaze over chicken and serve hot with rice or vegetables.
Notes
For a healthier version, use low-sugar marmalade and low-sodium soy sauce.
Air fryer method: cook at 375°F for 15 minutes, brush with glaze, and cook another 3–5 minutes.
Store leftovers in the fridge for up to 4 days, or freeze up to 3 months.
