Ingredients

  • 1 box cornbread mix (8.5 ounces)
  • ½ cup shredded cheddar cheese
  • ⅓ cup whole milk
  • 1 large egg
  • 1 can cream-style sweet corn (14.75 ounces)
  • 1 tablespoon butter
  • ½ cup diced onion
  • 1 large green bell pepper, finely chopped
  • 1 pound lean ground beef
  • 1 can sloppy joe sauce (24 ounces, divided)
  • 1 ½ cups shredded cheddar cheese

Instructions

  1. Preheat oven to 400°F and grease a 9×13-inch casserole dish.
  2. In a bowl, mix cornbread mix, cheddar cheese, milk, egg, and cream-style corn until smooth.
  3. Pour into prepared dish and bake for 15 minutes until slightly set.
  4. In a skillet, melt butter and sauté onion and bell pepper for 2–3 minutes.
  5. Add ground beef and cook until browned; drain excess grease.
  6. Stir in half of the sloppy joe sauce and cook until hot and thickened.
  7. Remove cornbread from oven, poke holes with a fork, and pour remaining sauce over top.
  8. Spread beef mixture evenly, sprinkle with cheddar cheese, and bake 10–15 minutes until bubbly and golden.
  9. Cool slightly before serving.

Notes

You can use homemade sloppy joe sauce instead of canned. For extra flavor, add jalapeños or switch the cheese to pepper jack or mozzarella.
