- 1 box cornbread mix (8.5 ounces)
- ½ cup shredded cheddar cheese
- ⅓ cup whole milk
- 1 large egg
- 1 can cream-style sweet corn (14.75 ounces)
- 1 tablespoon butter
- ½ cup diced onion
- 1 large green bell pepper, finely chopped
- 1 pound lean ground beef
- 1 can sloppy joe sauce (24 ounces, divided)
- 1 ½ cups shredded cheddar cheese
Instructions
- Preheat oven to 400°F and grease a 9×13-inch casserole dish.
- In a bowl, mix cornbread mix, cheddar cheese, milk, egg, and cream-style corn until smooth.
- Pour into prepared dish and bake for 15 minutes until slightly set.
- In a skillet, melt butter and sauté onion and bell pepper for 2–3 minutes.
- Add ground beef and cook until browned; drain excess grease.
- Stir in half of the sloppy joe sauce and cook until hot and thickened.
- Remove cornbread from oven, poke holes with a fork, and pour remaining sauce over top.
- Spread beef mixture evenly, sprinkle with cheddar cheese, and bake 10–15 minutes until bubbly and golden.
- Cool slightly before serving.
Notes
You can use homemade sloppy joe sauce instead of canned. For extra flavor, add jalapeños or switch the cheese to pepper jack or mozzarella.
