Ingredients
– 3 overripe bananas,
– 1.5 cups all-purpose flour,
– 1/2 cup brown sugar,
– 2 eggs,
– 1/2 cup melted butter,
– 1 tsp vanilla extract,
– 1 tsp baking soda,
– Pinch of salt,
– Optional: 1/2 cup chopped walnuts or chocolate chips,
– Optional: 1/2 cup Greek yogurt or sour cream,
Instructions
Preheat your oven to 350°F (175°C). Grease and line a 9×5-inch loaf pan with parchment paper.
Mash the bananas in a large mixing bowl. Add the eggs, melted butter, brown sugar, and vanilla. Mix until combined.
In a separate bowl, whisk together flour, baking soda, and salt. Gently fold the dry ingredients into the wet ingredients until just combined. Do not overmix.
Fold in any optional mix-ins like walnuts, chocolate chips, or yogurt.
Pour the batter into the prepared loaf pan. Bake for 55–60 minutes or until a toothpick inserted into the center comes out clean.
Let the loaf cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
Notes
> Store in an airtight container at room temperature for 3 days, or freeze for up to 3 months.
> For best slicing, let the loaf cool completely and use a serrated knife.
