- 1/2 medium onion, finely chopped
- 1 green bell pepper, finely chopped
- 1 lb shrimp, peeled, deveined, and chopped

- 2 cups shredded Chihuahua cheese (or mozzarella)
- 8 to 10 corn tortillas
Instructions
- In a large skillet, melt 1 tbsp butter with 1 tbsp olive oil over medium heat. Add chopped onion and bell pepper; sauté 2–3 minutes until soft.
- Add chopped shrimp and cook 3–4 minutes until pink and opaque. Season with salt and pepper. Transfer filling to a bowl.
- Clean or grab a new skillet. Melt a small pat of butter over medium heat.
- Place a tortilla flat in the pan, sprinkle cheese over the surface, then add shrimp filling on one half once cheese starts melting.
- Fold the tortilla over, press gently with a spatula to seal, and let cheese ooze slightly for crispy edges. Cook 2–3 minutes.
- Flip taco and cook the other side for 1–2 minutes until golden and crisp. Remove and repeat for all tortillas, adding butter as needed.
