Turkey Lasagna Soup is a cozy, cheesy, and hearty twist on classic lasagna. Made with lean ground turkey, rich tomato broth, and melted mozzarella, this one-pot comfort food is perfect for busy weeknights and meal prepping.
Ingredients
“1 lb lean ground turkey”,
“1 tablespoon olive oil”,
“1 medium onion, chopped”,
“3 cloves garlic, minced”,
“1 (28 oz) can crushed tomatoes”,
“1 (14.5 oz) can diced tomatoes”,
“2 tablespoons tomato paste”,
“4 cups chicken or turkey broth”,
“6–8 lasagna noodles, broken into pieces”,
“1 cup ricotta cheese”,
“1 cup shredded mozzarella cheese”,
“1/2 cup grated Parmesan cheese”,
“2 teaspoons Italian seasoning”,
“Salt and black pepper, to taste”,
“1–2 cups baby spinach (optional)”,
“1/4 teaspoon red pepper flakes (optional)”
Instructions
> Heat olive oil in a large pot over medium heat. Add ground turkey and cook until browned, breaking it apart with a spoon.
> Add onion and sauté until translucent. Stir in garlic and cook for 30 seconds.
> Stir in tomato paste and cook for 1-2 minutes. Add crushed tomatoes, diced tomatoes, broth, Italian seasoning, salt, pepper, and red pepper flakes.
> Bring to a boil, then reduce heat and simmer for 10–15 minutes.
> Add broken lasagna noodles. Cook uncovered for 8–10 minutes, stirring occasionally, until pasta is tender.
> Stir in spinach, if using, and cook until wilted. Serve hot topped with ricotta, mozzarella, and Parmesan cheese.
Notes
Store leftovers in an airtight container in the fridge for up to 4 days.
For best results, store pasta separately from the soup base.
This soup can also be frozen without pasta and cheese.
